Helen Beatrix Potter was born on July 28, 1866 in England. Educated at home, she spent much of her time outside exploring and developed a love of nature that she enjoyed painting from an early age. She wrote, illustrated and self-published The Tales of Peter Rabbit, loved by children even to this day. Peter, notorious for helping himself in Mr. McGregor’s garden, would have enjoyed these carrot-laden recipes.
