Break out the remote and the munchies because it’s time for the biggest game in pro football—the Super Bowl! The 2010 Super Bowl, also known as Super Bowl XLIV, will be played February 7, at Dolphin Stadium in Miami.
If the excitement of the big game isn’t enough for you, don’t change the channel just stay tuned for the halftime show, featuring The Who. Roger Daltrey and Pete Townshend, The Who’s two remaining original members, will be rocking the stadium.
You may want to host a Super Bowl Potluck if you are inviting friends over to watch. Have everyone bring his or her favorite Super Bowl snacks so you don’t end up doing all the work. Put out some fun football decorations and set up some activities for the kids (and maybe a few adults) who aren’t interested in watching the game.
A video game can be set up in another room for the kids to enjoy if the weather is cold outside. You can also have a football toss in the backyard, or set up a craft station with kid friendly projects to keep little hands occupied.
Below is a recipe for a Miami-inspired snack that all your guests will enjoy!
Easy Sausage Empanadas
1/4 pound bulk pork sausage
2 tablespoons finely chopped onion
1/8-teaspoon garlic powder
1/8-teaspoon ground cumin
1/8-teaspoon dried oregano, crushed
1 tablespoon chopped pimiento-stuffed olives
1 tablespoon chopped raisins
1 large egg, separated
1 (15-ounce) package prepared pie crusts (2 crusts)
Crumble sausage in a medium skillet. Add onion, garlic powder, cumin and oregano; cook over medium-high heat till sausage is no longer pink. Drain and discard drippings. Stir in olives and raisins.
Beat the egg yolk slightly; stir into sausage mixture, mixing well.
Unfold crusts and cut into 3-inch rounds with biscuit cutter.
Place about 2 teaspoons of sausage filling on half the cutouts. Top with remaining dough. Moisten fingers with water and pinch dough to seal edges. Slightly beat the egg white; gently brush over top of empanadas.
Bake in a 425-degree F. oven for 15 to 18 minutes, until browned. Serve hot.
